Like the larger 8-inch version, this 7-inch chef's knife is based on its elegant Asian counterpart, the gyuto. It offers a wider heel, a fairly flat profile toward the heel—perfect for push cuts—but Kai also gave it a little belly from mid-blade toward the tip so that it can be gently "rocked" through fresh herbs or spices. This slightly smaller size is an exceptionally lightweight and easy-to-use version of the all-purpose chef's knife that no cook can be without.
